Holiday Stuffed Squash Recipe
Slow roasted butternut squash rounds filled with a lightly spiced chestnut, quinoa and lentil stuffing scattered with dried cherries, this Christmas main is vegan, gluten-free and so wonderful.
My mouth is watering as I write this. I haven’t made this recipe but I am sharing it because I plan to make this with our thanksgiving dinner. Then probably again at Christmas. I love squash and if you are anything like me, I have so many stored I need new recipes to try with them all.
