- Heat the butter or vegetable oil in a large soup pot over medium heat. Add the chopped onion, sliced carrots, and sliced celery, then cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
- Pour in the chicken broth and add the salt, black pepper, dried parsley, and poultry seasoning. Bring the seasoned broth to a boil.
- Stir in the uncooked medium egg noodles. Reduce the heat and simmer according to the noodle package directions, usually 8–10 minutes, until the noodles are tender.
- Add the cooked shredded or cubed chicken during the final 3–5 minutes of cooking. Stir gently and allow the chicken to heat through without boiling it for the entire cooking time.
- Taste the soup and adjust the seasoning before serving. Ladle the hot soup into bowls and serve immediately for the best noodle texture.
Notes
For make-ahead soup, cook the egg noodles separately and add them to individual bowls so they do not absorb too much broth and become overly soft during storage. Keep refrigerated leftovers in a covered container and reheat gently.
