Weight Watchers Berry Popsicles

These simple homemade berry popsicles combine fresh strawberries, raspberries, blueberries, or blackberries with lemon juice for a colorful, refreshing dessert. The recipe makes about six popsicles and freezes in 4–6 hours.

  • 1/2 cup Cold water
  • 2 tablespoons Granulated sugar, or calorie-free sweetener equivalent
  • 1 tablespoon Fresh lemon juice

Step-by-Step
  1. Rinse the berries thoroughly and remove the strawberry stems if using. Add the prepared berries, cold water, sugar or calorie-free sweetener, and fresh lemon juice to a blender or food processor.
  2. Blend the mixture until smooth, stopping to scrape down the sides if needed. For a chunkier popsicle, pulse briefly or reserve a few berries and stir the chopped pieces into the blended mixture.
  3. Taste the berry mixture before filling the molds. If the fruit is tart, adjust the sweetener to suit your preference.
  4. Pour the mixture evenly into six popsicle molds, leaving a little space at the top for expansion. Insert the sticks according to the mold instructions.
  5. Freeze the popsicles for 4–6 hours, or until completely solid; freezing overnight is preferred for the firmest texture. To release one, briefly run the outside of the mold under warm water.

Notes

Very ripe berries may need little or no added sweetener. If a popsicle is difficult to remove, warm the mold under—not over—hot water for a few seconds. The Points value cannot be stated reliably without the exact sweetener and current WW program calculation.
