Ingredients

Creamy Filling
  • 8 ounces Reduced-fat cream cheese, softened
  • 1/2 cup Hummus
  • 1/4 cup Dried cranberries
  • 1/4 cup Sunflower kernels
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
Assembly
  • 8 tortillas Flour tortillas, about 8 inches each
  • 8 leaves Lettuce leaves
  • 8 ounces Thinly sliced deli turkey

Method

Step-by-Step
  1. Soften the cream cheese until it spreads easily. Stir or beat it with the hummus until smooth, then mix in the dried cranberries, sunflower kernels, salt, and black pepper.
  2. Spread the filling evenly over each flour tortilla, leaving only a narrow border around the edge. Place one lettuce leaf and an even portion of sliced turkey over the filling.
  3. Roll each tortilla firmly in jelly-roll style, keeping the layers even and making sure the center does not gap. Wrap each roll in plastic wrap and refrigerate for at least 1 hour.
  4. Trim the ends if desired, then use a sharp knife to cut each chilled roll into approximately 1/2-inch pinwheels. Arrange the spirals on a platter and serve cold.

Notes

Chilling is essential for clean slices and firm filling. Prepare the rolls several hours ahead, keep them refrigerated, and slice shortly before serving. If tortillas crack, warm them briefly or use room-temperature tortillas.
