- Heat the oven to 375°F. If using frozen corn, thaw it completely and drain away excess water; if using canned corn, drain it thoroughly.
- In a large bowl, combine the softened cream cheese, mayonnaise, sour cream, minced garlic, kosher salt, black pepper, and optional chili powder or smoked paprika until smooth.
- Stir in the corn, jalapeno, diced onion, green onions, 1/2 cup cheddar, 1/2 cup Monterey Jack, and Parmesan until evenly combined.
- Transfer the mixture to an approximately 8-inch square or 9-inch round baking dish. Sprinkle the remaining cheddar and Monterey Jack evenly over the top.
- Bake for 20–25 minutes, until hot, bubbling, and lightly browned around the edges and across the cheese topping.
- Rest the dip for 5 minutes, then serve warm with tortilla chips, toasted bread, crackers, or sliced vegetables.
Notes
Drain the corn very well for the best texture. Soften the cream cheese before mixing to prevent lumps. For deeper flavor, roast or saute the corn and onion for several minutes before combining them with the other ingredients. Bacon, canned diced green chiles, Mexican-blend cheese, mozzarella, or Colby-Jack can be used as variations.
