A moist Bundt-style sweet potato cake flavored with cinnamon, nutmeg, ginger, and vanilla, then finished with a simple pourable glaze. It makes about 12 generous servings.

Cake
  • 3 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/2 teaspoon Ground ginger
  • 1/2 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 eggs Large eggs, at room temperature
  • 2 cups Mashed cooked sweet potato, cooled
  • 2 teaspoons Vanilla extract
  • 1 cup Buttermilk
Optional Additions
  • 1/2 cup Chopped pecans or walnuts
  • 1 teaspoon Orange zest
  • 1/4 teaspoon Ground cloves
Glaze
  • 1 1/2 cups Confectioners’ sugar
  • 2–3 tablespoons Milk or orange juice
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Method
 

Step-by-Step
  1. Cook the sweet potatoes until very tender. Bake them at 400°F for about 45–60 minutes, or peel, cube, and boil them until soft. Cool, mash until smooth, and measure 2 cups.
  2. Heat the oven to 350°F and thoroughly grease and flour a 10- to 12-cup Bundt pan.
  3. Whisk the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt together in a bowl.
  4. Beat the softened butter and sugar for 3–4 minutes, until light and fluffy. Add the eggs one at a time, beating well after each addition, then mix in the sweet potato and vanilla.
  5. Add the dry ingredients in three additions, alternating with the buttermilk in two additions. Mix only until combined, then fold in nuts if using.
  6. Transfer the batter to the prepared pan and smooth the top. Bake for 55–65 minutes, until a toothpick inserted in the thickest part comes out clean or with a few moist crumbs.
  7. Cool the cake in the pan for 10–15 minutes, then invert it onto a rack. Cool completely before glazing.
  8. Whisk the confectioners’ sugar, milk or orange juice, vanilla, and salt until smooth. Add the liquid gradually so the glaze remains thick but pourable, then drizzle it over the cooled cake.

Notes

Use well-drained sweet potato purée so excess moisture does not make the cake heavy. Grease every ridge of the Bundt pan, preferably with softened butter or baking spray containing flour. Store covered at room temperature for up to 2 days or refrigerate for longer storage.
