Step-by-Step
  1. Heat the oven to 350°F. Finely chop the onions so they soften evenly and distribute throughout the creamy mixture.
  2. For a milder, sweeter flavor, sauté the chopped onions in a small amount of butter or oil over medium heat for 5–8 minutes, just until softened. Cool them briefly before mixing; you may also use the onions raw, allowing them to cook during baking.
  3. In a bowl, stir together the mayonnaise, sour cream, Swiss cheese, Parmesan, black pepper, and optional salt.
  4. Fold the chopped onions into the cheese mixture until they are evenly distributed.
  5. Transfer the mixture to an 8-inch square baking dish or 1-quart casserole. Spread the top into an even layer.
  6. Bake uncovered for 25–30 minutes, until the dip is hot, bubbling throughout, and lightly browned around the edges.
  7. Let the dip rest for 5–10 minutes before serving so it thickens slightly. Serve warm with crackers, toasted baguette slices, pita chips, or vegetables.

Notes

Drain or briefly sauté very juicy onions so excess moisture does not make the dip thin or greasy. Freshly grated cheese browns nicely, and the finished dish may be placed under the broiler for 1–2 minutes at the end, watched closely. Optional variations include mozzarella or cheddar, 1/2 teaspoon Worcestershire sauce, a few dashes of hot sauce, or cream cheese for a richer version.
