Strawberry and Cream Cupcakes Everyone Will Love

Tender vanilla cupcakes are topped with lightly sweetened vanilla whipped cream and fresh strawberries. This easy recipe makes 12 pretty, bakery-style treats.

Cupcakes
  • 200 g Unsalted butter, softened
  • 200 g Golden caster sugar or superfine sugar
  • 3 Large eggs
  • 200 g Self-raising or self-rising flour
  • 1 teaspoon Baking powder
  • 2 tablespoons Milk
Strawberry-and-Cream Topping
  • 300 ml Heavy cream or double cream, chilled
  • 25 g Confectioners' sugar or icing sugar
  • 1 teaspoon Vanilla extract
  • 12 Strawberries, hulled

Method
 

Step-by-Step
  1. Heat the oven to 180°C/350°F, or 160°C fan/convection, and line a 12-cup muffin tin with paper liners.
  2. Beat the softened butter and sugar until pale, fluffy, and noticeably lighter in texture.
  3. Add the eggs one at a time, beating well after each addition. If the mixture begins to curdle, add a spoonful of the flour.
  4. Fold in the self-raising flour and baking powder, then stir in the milk to make a soft, spoonable batter.
  5. Divide the batter evenly among the paper liners, filling each about two-thirds full.
  6. Bake for 18–20 minutes, until the cupcakes are risen, lightly golden, and firm in the center. A skewer should come out clean or with only a few moist crumbs.
  7. Cool the cupcakes in the tin for several minutes, then transfer them to a wire rack and cool completely.
  8. Whip the chilled cream with the icing sugar and vanilla until it holds soft or medium peaks. Pipe or spoon the cream over the cooled cupcakes and finish each one with a hulled strawberry.

Notes

Use softened rather than melted butter for a lighter crumb. Chill the bowl and beaters before whipping the cream, and stop as soon as medium peaks form so the cream does not become grainy. Refrigerate finished cupcakes and add the strawberries shortly before serving when preparing them in advance.
