Sticky Toffee Apple Cake

A moist date and apple sponge baked until tender, then soaked with warm butter-toffee sauce. Serve it warm for a classic British-inspired dessert with a fruity twist.

Ingredients
  

Apple-Date Cake
  • 175 g Pitted dates, finely chopped
  • 250 ml Boiling water
  • 1 tsp Baking soda
  • 115 g Unsalted butter, softened
  • 150 g Dark brown sugar or light muscovado sugar
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 200 g Plain/all-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Fine salt
  • 2 medium Medium apples, peeled, cored, and diced small
  • 1/2 tsp Ground cinnamon, optional
Toffee Sauce
  • 100 g Unsalted butter
  • 150 g Dark brown sugar or dark muscovado sugar
  • 200 ml Double/heavy cream
  • 1 tbsp Golden syrup or dark corn syrup
  • 1/4 tsp Fine salt, optional

Method
 

Step-by-Step
  1. Heat the oven to 180°C conventional or 160°C fan/350°F. Grease and line a 20-cm/8-inch square pan or a 23-cm/9-inch round cake pan.
  2. Place the chopped dates in a bowl, pour over the boiling water, and stir in the baking soda. Leave for 10 minutes, then mash the softened dates lightly.
  3. Beat the softened butter and brown sugar until creamy. Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
  4. Sift in the flour, baking powder, salt, and optional cinnamon. Fold in the date mixture and diced apples just until combined.
  5. Spread the batter into the prepared pan and bake for 35–45 minutes. The cake should be risen and firm, with a skewer coming out with a few moist crumbs but no wet batter.
  6. While the cake bakes, place the sauce butter, brown sugar, cream, golden syrup, and optional salt in a saucepan. Heat gently until the butter melts, then bring to a brief simmer, stirring until smooth and glossy.
  7. Let the cake stand for about 10 minutes, prick the surface lightly, and spoon over some warm toffee sauce. Cut into 8–10 servings and serve warm with the remaining sauce.

Notes

Use tart, firm apples such as Bramley, Granny Smith, or Pink Lady. Avoid overbaking because the cake continues to firm as it cools and absorbs the sauce. Make the toffee sauce gently and avoid prolonged boiling. Store covered in the refrigerator and reheat individual portions gently before serving.
