Squash and Cornbread Casserole

Tender yellow squash and onion are folded into a buttery, creamy cornbread mixture and baked with sharp Cheddar until golden. This Southern-style casserole is an easy side dish that is especially good with roasted meats, chili, or a fresh green salad.

  • 2 pounds Yellow summer squash, sliced
  • 1 small-to-medium Yellow onion, finely chopped
  • 1 8.5-ounce box Jiffy corn muffin mix
  • 2 eggs Large eggs
  • 1 cup Sour cream
  • 1/2 cup Unsalted butter, melted
  • 1 cup Shredded sharp Cheddar cheese
  • 1 teaspoon, plus more for cooking squash Salt
  • 1/2 teaspoon Black pepper

Method
 

Step-by-Step
  1. Heat the oven to 350°F and grease a 9-by-13-inch baking dish or a similar 2 1/2- to 3-quart casserole dish.
  2. Cook the sliced squash and chopped onion in lightly salted water for 8–10 minutes, just until the squash is tender but still holds its shape. Drain very thoroughly and let the vegetables cool slightly.
  3. In a large bowl, whisk together the eggs, sour cream, melted butter, 1 teaspoon salt, and black pepper.
  4. Stir the cornbread mix and about half of the shredded Cheddar into the egg mixture until combined.
  5. Fold the drained squash and onion into the cornbread mixture, taking care not to mash the squash.
  6. Transfer the mixture to the prepared baking dish and spread it level. Sprinkle the remaining Cheddar evenly over the top.
  7. Bake uncovered at 350°F for 35–45 minutes, until the center is set and the top is lightly browned. Let the casserole rest for 5–10 minutes before serving.

Notes

Drain the cooked squash extremely well because excess water can make the casserole loose or soggy. Press it gently in a colander, or briefly sauté the drained squash if it still seems wet. Do not overcook the squash before baking; it should be tender but retain its shape.
