Roasted Brussels Sprouts and Sweet Potato with Balsamic-Honey Glaze

Brussels sprouts and sweet potatoes roast until browned and tender, then are finished with a warm balsamic-honey glaze. Toasted pecans, walnuts, or dried cranberries make a delicious optional topping.

Ingredients
  

Roasted Vegetables
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 medium, about 1 1/2 pounds total Sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons Olive oil, divided
  • 1 teaspoon Kosher salt, divided
  • 1/2 teaspoon Freshly ground black pepper
Balsamic-Honey Glaze
  • 1/4 cup Balsamic vinegar
  • 2 tablespoons Honey
  • 1 teaspoon Dijon mustard, optional
  • 1 Small garlic clove, finely minced, optional
Optional Finish
  • 1/4 cup Toasted pecans or walnuts
  • 2 tablespoons Dried cranberries

Method
 

Step-by-Step
  1. Heat the oven to 425°F. Line a large rimmed baking sheet with parchment if desired, and preheat the baking sheet as the oven heats for better browning.
  2. Toss the sweet potato cubes with 1 1/2 tablespoons olive oil, about 1/2 teaspoon kosher salt, and half of the black pepper. Spread them in a single layer on the baking sheet and roast for 15 minutes.
  3. Toss the halved Brussels sprouts with the remaining olive oil, remaining salt, and pepper. Add them to the pan with the sweet potatoes, arranging as many Brussels sprouts cut-side down as possible.
  4. Roast the vegetables for another 15–20 minutes, leaving the Brussels sprouts undisturbed for most of the cooking time. They are ready when the vegetables are browned and tender.
  5. While the vegetables roast, combine the balsamic vinegar, honey, Dijon mustard, and minced garlic in a small saucepan. Simmer over medium-low heat for 3–5 minutes, stirring frequently, until slightly thickened, then remove from the heat before it reduces too far.
  6. Transfer the roasted vegetables to a serving bowl or platter and drizzle with the warm glaze. Toss gently, then finish with toasted pecans, walnuts, or dried cranberries if using.

Notes

Cut the sweet potatoes into slightly smaller pieces than the Brussels sprouts so both vegetables finish at approximately the same time. Avoid crowding the baking sheet because trapped moisture can prevent caramelization. The glaze thickens as it cools, so stop simmering when it is only slightly thickened.
