Quick and Easy Lemonade Jello Whips

A cool, fluffy lemon dessert made with four simple ingredients and finished with a long refrigerator chill. It is sweet, tangy, creamy, and especially refreshing on warm days.

  • 1 3-ounce package Lemon-flavored gelatin
  • 1 cup Boiling water
  • 1 6-ounce can Frozen lemonade concentrate, thawed
  • 1 12-fluid-ounce can Evaporated milk, thoroughly chilled

  • As needed Lemon slices or whipped cream

Method
 

Step-by-Step
  1. Dissolve the lemon gelatin completely in 1 cup of boiling water, stirring until no granules remain. Stir in the thawed frozen lemonade concentrate.
  2. Refrigerate the lemonade-gelatin mixture for 30–60 minutes, checking it often. It should be syrupy and softly thickened, not fully firm.
  3. Beat the thoroughly chilled evaporated milk in a cold mixing bowl with chilled beaters until it becomes light and fluffy and holds soft peaks.
  4. Fold the whipped evaporated milk into the partially set lemon mixture in gentle motions. Stop as soon as the color and texture are mostly uniform.
  5. Spoon the mixture into a serving bowl, individual dessert dishes, or a prepared graham-cracker crust. Add graham-cracker crumbs now if desired.
  6. Refrigerate for 2–3 additional hours, or until fully set. Garnish with lemon slices or whipped cream just before serving.

Notes

Chill the evaporated milk, mixing bowl, and beaters well before whipping. Do not let the gelatin mixture become firm before folding, or the finished dessert may be lumpy instead of smooth and airy.
