- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk the flour, baking powder, and salt together in a medium bowl.
- Beat the softened butter and 1 cup granulated sugar for 2 to 3 minutes, until light and creamy.
- Beat in the egg and vanilla extract until fully combined.
- Mix in the dry ingredients just until a soft dough forms. Do not overmix.
- Cover and refrigerate the dough for 20 to 30 minutes if it feels too soft or sticky to handle.
- Stir the remaining sugar and cinnamon together in a shallow bowl.
- Scoop about 1 1/2 tablespoons of dough for each cookie, roll into balls, and coat thoroughly in the cinnamon sugar.
- Arrange the balls about 2 inches apart on the prepared baking sheets and flatten very slightly if desired.
- Bake for 10 to 12 minutes, until the edges are set while the centers still look slightly soft.
- Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack to finish cooling.
Notes
