Ingredients
  

Crust
  • 2 cups Graham-cracker crumbs
  • 1/2 cup Unsalted butter, melted
  • 1/4 cup Granulated sugar
Creamy Pineapple Layer
  • 8 ounces Cream cheese, softened
  • 1 cup Powdered sugar
  • 20 ounces Canned crushed pineapple, very well drained
  • 8 ounces Whipped topping, thawed
Topping
  • 8 ounces Additional whipped topping, thawed
  • 1/4 cup Chopped pecans or walnuts, optional
  • As needed Maraschino cherries, optional

Step-by-Step
  1. Mix the graham-cracker crumbs, melted butter, and granulated sugar until evenly moistened. Press the mixture firmly into the bottom of a 9 x 13-inch baking dish and refrigerate while preparing the filling.
  2. Beat the softened cream cheese and powdered sugar until smooth and creamy. Fold in the very well-drained crushed pineapple, then gently fold in 8 ounces of thawed whipped topping.
  3. Spread the pineapple mixture evenly over the chilled crust. Spread the remaining 8 ounces of whipped topping over the filling, then add nuts or cherries if desired.
  4. Cover the dish and refrigerate for at least 4 hours before slicing. Overnight chilling is best for the cleanest pieces and the firmest texture.

Notes

Drain the crushed pineapple very thoroughly by pressing it in a fine-mesh strainer or gently squeezing it in cheesecloth. Fully soften the cream cheese before mixing, and fold in the whipped topping gently to keep the filling light. Store covered in the refrigerator.
