  • 2 eggs Large eggs

  • 1/4 teaspoon Ground nutmeg
Optional Additions
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Ground cloves or allspice

Method
 

Step-by-Step
  1. Heat the oven to 425°F. Fit the unbaked crust into a 9-inch pie plate, crimp the edges, and place the pie plate on a preheated baking sheet if possible.
  2. Whisk the eggs in a large bowl. Add the apple butter, evaporated milk, sugar, cinnamon, salt, and nutmeg, along with the optional vanilla and cloves or allspice if using, and whisk until smooth.
  3. Pour the filling into the unbaked crust. Bake at 425°F for 15 minutes, then reduce the oven temperature to 350°F without opening the oven for an extended time.
  4. Continue baking for approximately 30 to 40 minutes, or until the edges look firm and the center still has a slight jiggle. A knife inserted near the center should come out mostly clean.
  5. Cool the pie completely on a rack for at least 2 hours before slicing. Refrigerate it after cooling if it will not be served promptly, then serve plain or with whipped cream.

Notes

Use thick, well-reduced apple butter rather than loose applesauce. Shield the crust edge with foil or a pie shield if it browns too quickly, and avoid overbaking because the custard may crack or become grainy.
