No-Bake Strawberry Cheesecake Ice Cream Pie

A creamy frozen strawberry dessert with a homemade graham-cracker crust, tangy cream cheese, strawberry ice cream, and fresh berries. It requires no cooking and is ideal for making ahead.

Ingredients
  

Crust
  • 1 1/2 cups Graham-cracker crumbs
  • 6 tablespoons Unsalted butter, melted
  • 2 tablespoons Granulated sugar
Filling
  • 8 ounces Full-fat cream cheese, softened
  • 1/2 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 quart Strawberry ice cream, slightly softened
  • 1 cup Fresh strawberries, finely chopped
Optional Topping
  • 1 cup Whipped cream or thawed frozen whipped topping
  • as needed Fresh strawberries, sliced

Method
 

Step-by-Step
  1. Combine the graham-cracker crumbs, melted butter, and 2 tablespoons sugar. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch pie plate, then chill for 20–30 minutes.
  2. Beat the softened cream cheese, 1/2 cup sugar, and vanilla extract until completely smooth and lump-free.
  3. Let the strawberry ice cream stand at room temperature for 10–15 minutes, just until it is thick and easy to stir. Do not let it melt completely.
  4. Beat or fold the softened ice cream into the cream-cheese mixture until evenly blended. Fold in the finely chopped fresh strawberries.
  5. Spoon the filling into the chilled crust and smooth the top. Cover the pie and freeze for at least 4–6 hours, preferably overnight.
  6. Let the frozen pie stand at room temperature for approximately 10 minutes before slicing. Garnish with whipped cream and sliced strawberries immediately before serving.

Notes

Use full-fat cream cheese and soften it completely before mixing. Pat especially juicy strawberries dry before chopping. For clean slices, dip a sharp knife in hot water and wipe it dry between cuts.
