Ingredients
  

Blondie Base
  • 1 cup Unsalted butter, melted
  • 2 cups Packed light brown sugar
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
Topping
  • 2 cups Miniature marshmallows
  • 1 cup Plain milk-chocolate M&M’s

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C). Grease a 9-by-13-inch baking pan or line it with parchment, leaving a little overhang for easy lifting.
  2. Whisk the melted butter and packed brown sugar together until smooth. Beat in the eggs and vanilla until the mixture is glossy and evenly combined.
  3. In a separate bowl, stir together the flour, baking powder, and salt. Add the dry ingredients to the butter mixture and stir just until no dry streaks remain.
  4. Spread the thick batter evenly in the prepared pan. Bake for about 20–25 minutes, until the top is set and lightly browned while the center still looks slightly soft.
  5. Remove the pan from the oven and immediately scatter the miniature marshmallows over the surface. Return the pan to the oven for about 2–4 minutes, just until the marshmallows soften and puff.
  6. Sprinkle the M&M’s over the warm marshmallows, pressing them lightly into the topping if needed so they adhere. Cool completely before slicing, and chill the cooled bars briefly for cleaner cuts.

Notes

Do not overbake the blondie base because the bars should remain chewy. Add the marshmallows near the end rather than at the beginning, since baking them for the full time can make them dissolve, harden, or brown too much.
