- Heat the oven to 350°F (175°C). Grease or parchment-line a 9 x 13-inch baking pan.
- Whisk the flour, cocoa powder, baking soda, and salt together in a medium bowl until evenly blended.
- In a separate large bowl, stir together the vegetable oil, granulated sugar, and vanilla extract. Add the finely shredded zucchini and mix well.
- Add the dry ingredients to the zucchini mixture and stir until combined. The batter can look very thick or slightly dry at this stage.
- Let the mixture stand for 5–10 minutes so the zucchini can release moisture. Stir again, then fold in the chocolate chips and chopped nuts if using.
- Transfer the batter to the prepared pan. Firmly press and spread it into an even layer, reaching the corners.
- Bake for 25–30 minutes, until the center is set and a toothpick inserted into the brownies comes out with moist crumbs rather than wet batter.
- Cool completely in the pan for at least 30 minutes before slicing. For frosting, whisk the melted butter, cocoa powder, powdered sugar, milk, and vanilla until smooth, then spread it over the cooled brownies.
Notes
Do not squeeze the zucchini dry because its moisture is essential to the fudgy texture. If the zucchini is exceptionally watery, drain only a small amount. Store cooled brownies covered at room temperature for several days or refrigerate for a firmer texture.
