Step-by-Step
- Add the coconut water or unsweetened almond milk to the blender first. Adding liquid before the solid ingredients helps the blades begin circulating the mixture.
- Add the packed baby spinach, frozen pineapple, frozen mango, half banana, fresh lime juice, and optional grated ginger. Blend the spinach with the liquid for 15–20 seconds first if you want an especially smooth texture.
- Blend on high for 45–60 seconds, or until the smoothie is completely smooth and no leafy pieces remain. Pause briefly to scrape down the sides if needed.
- Add the ice only when the fruit is not fully frozen or when a colder, thicker drink is desired. Blend again briefly until the ice is incorporated.
- Pour into a glass and serve immediately. The smoothie is at its freshest and thickest right after blending.
Notes
Freeze the banana and tropical fruit ahead of time for a thick smoothie without much ice. For variations, add 1/2 cup plain Greek yogurt, replace the coconut water with orange juice, add 1 tablespoon chia seeds or ground flaxseed, or substitute kale for spinach after removing tough stems and blending longer.
