Ingredients
  

For the Meatballs
  • 1/2 pound Ground beef
  • 1/2 pound Ground pork
  • 1 Large egg
  • 1/2 cup Italian-seasoned or plain fine breadcrumbs
  • 1/4 cup Finely grated Parmesan cheese
  • 2 Garlic cloves, finely minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
For the Soup
  • 1 tablespoon Olive oil
  • 1 Medium yellow onion, finely diced
  • 2 Medium carrots, diced
  • 2 Celery stalks, diced
  • 2 Garlic cloves, minced
  • 8 cups Low-sodium chicken broth
  • 1 cup Dry acini di pepe, orzo, or another very small pasta
  • 5-6 ounces Escarole, chopped
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
For Serving
  • 1/4 cup Grated Parmesan
  • As desired Lemon wedges

Step-by-Step
  1. Combine the ground beef, ground pork, egg, breadcrumbs, Parmesan, minced garlic, parsley, salt, and pepper gently in a bowl. Shape the mixture into approximately 35–45 small meatballs, each about 3/4 to 1 inch in diameter.
  2. For a lighter cooking method, arrange the meatballs on a parchment-lined baking sheet and bake at 400°F for 12–15 minutes, until cooked through. Alternatively, brown them in batches in a skillet with a little oil; they may finish cooking in the soup.
  3. Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery, then cook for 5–7 minutes until the vegetables begin to soften; add the garlic and cook for about 30 seconds.
  4. Pour in the chicken broth and bring it to a gentle boil. Add the cooked or partially cooked meatballs, reduce the heat, and simmer for about 8–10 minutes.
  5. Stir in the acini di pepe, orzo, or other very small pasta. Simmer according to the package directions, usually 7–10 minutes, stirring occasionally.
  6. Add the chopped escarole and cook for 2–4 minutes, until tender. If using baby spinach instead, add it during the final 1–2 minutes.
  7. Taste the soup and adjust the salt and pepper. Ladle it into bowls and serve hot with grated Parmesan and optional lemon wedges.

Notes

Keep the meatballs small so they cook quickly and remain balanced with the broth and pasta. Do not overmix the meatball mixture, since gentle handling keeps the meatballs tender. Tiny pasta continues absorbing broth as it sits, so serve promptly, cook pasta separately when preparing well ahead, or add extra broth before reheating.
