Immune-Boosting Chicken and Vegetable Soup

Ingredients
  

Soup Base
  • 2 tablespoons Extra-virgin olive oil
  • 1 medium Medium yellow onion, diced
  • 3 medium Medium carrots, sliced
  • 3 stalks Celery stalks, sliced
Aromatics and Seasoning
  • 4–6 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, finely grated
  • 1 teaspoon Ground turmeric
  • 1/2 teaspoon Red-pepper flakes
Main Ingredients
  • 8 cups Low-sodium chicken broth
  • 1 14–15-ounce can Diced tomatoes with juices
  • 1 pound Boneless, skinless chicken breasts or thighs
  • 1 15-ounce can Chickpeas, drained and rinsed
Seasoning and Finish
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 2 cups Chopped kale or baby spinach
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Fresh parsley, chopped

Method
 

Step-by-Step
  1. Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the onion, carrots, and celery, then cook for 6–8 minutes, stirring occasionally, until the vegetables begin to soften.
  2. Add the minced garlic, grated ginger, turmeric, and optional red-pepper flakes. Cook for 30–60 seconds, stirring constantly, until the aromatics smell fragrant.
  3. Pour in the chicken broth and diced tomatoes with their juices. Add the chicken, chickpeas, kosher salt, and black pepper.
  4. Bring the soup to a boil, then reduce the heat to low. Partially cover the pot and simmer for 18–25 minutes, until the chicken reaches 165°F (74°C) internally and is easy to shred.
  5. Transfer the cooked chicken to a plate and shred it with two forks. Return the shredded chicken to the pot.
  6. Stir in the chopped kale and simmer for 2–4 minutes, until tender. If using baby spinach, simmer it for about 1 minute instead.
  7. Remove the pot from the heat and stir in the lemon juice. Taste the soup and adjust the salt, pepper, and lemon juice as needed.
  8. Ladle the soup into bowls and garnish with chopped fresh parsley. Serve hot with your favorite crusty bread or a simple green salad.

Notes

Chicken thighs remain especially tender during simmering, while chicken breasts should be monitored carefully so they do not overcook. For a faster version, use shredded rotisserie chicken and add it during the final 5–10 minutes. Store cooled leftovers in the refrigerator and reheat gently on the stovetop or in the microwave.
