- Line or lightly grease a 9 x 13-inch baking pan so the finished bars release easily.
- Combine the granulated sugar and light corn syrup in a saucepan over medium heat. Stir until the sugar dissolves and the mixture reaches a gentle boil.
- Boil the syrup mixture for approximately 1 minute, then remove the saucepan from the heat. Do not continue boiling, or the bars may become hard.
- Stir in the creamy peanut butter until the mixture is smooth and evenly blended.
- Fold in the crisp rice cereal until every piece is coated. Press the mixture firmly and evenly into the prepared pan.
- Melt the semisweet chocolate chips and butterscotch chips together in a microwave using short intervals, or in a heatproof bowl over simmering water. Stir until smooth.
- Spread the melted topping over the cereal layer. Refrigerate for 30–60 minutes, or until firm, then cut into about 24 bars.
Notes
Use a buttered spatula or lightly dampened hands to press the cereal mixture into the pan without crushing it. Melt the topping gently and avoid overheating it, since chocolate and butterscotch chips can seize or become grainy. Four cups of cereal create a closely packed, chewy bar; some versions use 5 cups for a firmer, less chewy texture.
