- Add the oil and 2 to 3 popcorn kernels to a large heavy-bottomed pot with a tight-fitting lid. Cover and heat over medium to medium-high heat until the test kernels pop.
- Briefly remove the pot from the burner. Add the remaining popcorn kernels, sugar, and salt, then cover the pot securely.
- Return the pot to the heat and shake it gently and continuously, or every few seconds, to distribute the kernels and keep the sugar from scorching.
- When popping slows to roughly 2 to 3 seconds between pops, remove the pot from the heat immediately. Do not wait for every kernel to pop.
- Pour the kettle corn onto a large baking sheet or into a bowl at once. Cool for a few minutes, break apart clumps, and add more salt if desired.
Notes
Spread the popcorn immediately after cooking so steam can escape and the sugar coating can set crisp. Butter is not required; if used, add it sparingly after cooking because it can soften the finished popcorn.
