  • 3 cups Cooked, shredded chicken
  • 1 can (10.5-10.75 ounces) Condensed cream of chicken soup, undiluted
  • 1 cup Sour cream
  • 1 can (4 ounces) Chopped green chiles
  • 1/2 cup Finely chopped onion
  • 12 tortillas Small corn tortillas, cut into approximately 1-inch pieces
  • 2 cups Shredded Monterey Jack, pepper Jack, or Mexican-blend cheese
Seasoning
  • 1/2 teaspoon, optional Salt
  • 1/4 teaspoon, optional Black pepper

Method
 

Step-by-Step
  1. Heat the oven to 350°F and grease a 9-by-13-inch baking dish.
  2. In a large bowl, stir together the shredded chicken, undiluted condensed cream of chicken soup, sour cream, green chiles, onion, salt, and black pepper.
  3. Arrange half of the cut corn tortilla pieces in the bottom of the prepared baking dish.
  4. Spread half of the chicken mixture over the tortilla pieces, then sprinkle half of the shredded cheese over the chicken.
  5. Repeat the layers with the remaining tortilla pieces, chicken mixture, and cheese.
  6. Cover the dish loosely with foil and bake for about 25 minutes. Remove the foil and continue baking for 5 to 10 minutes, until the casserole is hot and bubbling and the cheese has melted.
  7. Let the casserole stand for 5 to 10 minutes before serving so the layers can settle.

Notes

Freshly shredded cheese usually melts more smoothly than many pre-shredded varieties. If the chicken is very moist or the green chiles are not drained, keep the casserole covered only during the first part of baking and finish it uncovered so extra moisture can evaporate.
