- Heat the oven to 350°F and lightly grease a 2-quart baking dish.
- Place the sliced yellow squash and chopped onion in a saucepan. Cover with water, bring to a boil, and simmer for 5 to 10 minutes, just until tender.
- Drain the squash and onion very well, gently pressing out excess moisture if needed.
- Combine the drained vegetables with the mayonnaise, beaten egg, shredded Cheddar, salt, and black pepper.
- Transfer the mixture to the prepared 2-quart baking dish.
- Mix the crushed buttery crackers with the melted butter, then spread the crumbs evenly over the casserole.
- Bake uncovered for about 30 minutes, until hot, bubbling, and lightly browned.
Notes
Drain the cooked squash thoroughly because excess water can make the casserole soupy. Cook the squash only until tender, since it continues cooking during the bake. Sharp Cheddar adds extra flavor. Refrigerate leftovers and reheat until hot.
