- Rinse the strawberries thoroughly and dry them completely. Hull the berries, then finely dice them into small, even pieces.
- Finely dice the red onion and mince the jalapeño. Remove the jalapeño seeds and membranes for a milder salsa.
- Add the diced strawberries, red onion, jalapeño, and chopped cilantro to a medium bowl.
- Pour in the fresh lime juice and sprinkle the kosher salt over the mixture.
- Gently fold everything together until combined, taking care not to mash the strawberries.
- Taste and adjust the lime juice, salt, or jalapeño as needed. Serve immediately, or refrigerate for 10–15 minutes so the flavors can blend.
Notes
For the best texture, prepare the salsa shortly before serving. If making it ahead, refrigerate it and add or adjust the lime juice just before serving because the strawberries release liquid as they stand.
