Fluffy and Easy Gluten-Free Waffles

These gluten-free waffles are crisp on the outside, fluffy inside, and simple enough for a relaxed weekend breakfast. A short batter rest helps the gluten-free flour absorb the liquid for a better texture.

Ingredients
  

Dry Ingredients
  • 2 cups (about 240 g) Gluten-free all-purpose flour blend
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Fine salt
  • 2 tablespoons Granulated sugar
Wet Ingredients
  • 2 Large eggs
  • 1 3/4 cups (420 ml) Buttermilk or milk
  • 1/2 cup (113 g) Unsalted butter, melted and slightly cooled
  • 1 teaspoon Pure vanilla extract
Optional Flour Support
  • about 1/2 teaspoon Xanthan gum, only if absent from the flour blend

Method
 

Step-by-Step
  1. Preheat the waffle iron thoroughly. Lightly grease it only if recommended by the manufacturer.
  2. Whisk together the gluten-free flour blend, baking powder, baking soda, salt, and sugar in a large bowl.
  3. In a separate bowl, whisk the eggs, buttermilk or milk, melted butter, and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and stir just until combined. A few small lumps are fine, so avoid overmixing.
  5. Let the batter stand for 5–10 minutes so the gluten-free flour can hydrate and the leavening can begin working.
  6. Pour the recommended amount of batter into the hot waffle iron, close the lid, and cook for about 3–5 minutes, or until golden brown and the steam has mostly subsided.
  7. Serve the waffles immediately, or keep them in a single layer in a 200°F/95°C oven until ready to serve.

Notes

Use a gluten-free flour blend intended for baking. If it does not contain xanthan gum, add about 1/2 teaspoon. Do not stack hot waffles because trapped steam can soften their crisp edges.
