Cuban Citrus Marinade
  • 1/4 cup Fresh orange juice
  • 2 tablespoons Fresh lime juice
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
Pork
  • 4 chops Boneless, lean pork loin chops, about 4 ounces each and 1/2 inch thick

Method
 

Step-by-Step
  1. Whisk the orange juice, lime juice, olive oil, minced garlic, cumin, oregano, kosher salt, and black pepper together in a small bowl.
  2. Place the pork chops in a shallow dish or resealable bag and pour the marinade over them. Turn the chops several times so every surface is coated.
  3. Cover the dish or seal the bag and refrigerate for about 30 minutes. For a stronger flavor, marinate for 1–2 hours, but do not leave the pork in the citrus marinade overnight.
  4. Heat a grill, grill pan, or large skillet over medium-high heat. Lightly oil the cooking surface if needed to prevent sticking.
  5. Remove the pork from the marinade and discard the used marinade. Cook the chops for approximately 4–5 minutes per side, depending on thickness, until the internal temperature reaches 145°F (63°C).
  6. Transfer the cooked pork to a plate and let it rest for 3 minutes before serving. Resting helps the juices settle so each chop stays moist.

Use thin, evenly sized chops and an instant-read thermometer for the most reliable results. The original Weight Watchers points value can vary according to the pork cut, olive oil, and plan being used, so count the pork and oil in the current app or plan.
