Easy Weight Watchers Broccoli Cauliflower Salad

A crisp, creamy broccoli cauliflower salad made lighter with Greek yogurt, light mayonnaise, reduced-fat cheddar, and your choice of center-cut or turkey bacon. Chill it for at least 30 minutes so the flavors blend before serving.

Ingredients
  

Salad
  • 3 cups Broccoli florets, cut into bite-size pieces
  • 3 cups Cauliflower florets, cut into bite-size pieces
  • 1/2 cup Red onion, finely chopped
  • 1/2 cup Reduced-fat shredded cheddar cheese
  • 4-6 slices Center-cut or turkey bacon, cooked and crumbled
  • 2 tablespoons Sunflower seeds, optional
Dressing
  • 1/2 cup Light mayonnaise
  • 1/2 cup Plain nonfat Greek yogurt
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Granulated sugar or zero-calorie sweetener, adjusted to taste
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

Method
 

Step-by-Step
  1. Cook the bacon until crisp, drain it on paper towels, and crumble it after it cools. Turkey bacon can be used when you want to reduce the Weight Watchers or WW points.
  2. Wash and thoroughly dry the broccoli and cauliflower. Cut both vegetables into small, bite-size florets so each serving is easy to scoop and the dressing coats the vegetables evenly.
  3. Add the broccoli, cauliflower, red onion, reduced-fat cheddar, bacon, and optional sunflower seeds to a large bowl. Toss the vegetables lightly to distribute the ingredients.
  4. In a separate bowl, whisk together the light mayonnaise, plain nonfat Greek yogurt, apple cider vinegar, sugar or zero-calorie sweetener, salt, and black pepper. Taste the dressing and adjust the sweetener to suit your preference.
  5. Pour the dressing over the salad mixture and toss until every floret is lightly coated. Cover the bowl and refrigerate for at least 30 minutes, or for 1 hour when possible.
  6. Toss the salad again just before serving and check the seasoning. If making it ahead, add the bacon and sunflower seeds shortly before serving for the best crunch.

Notes

Dry the vegetables very well after washing because excess water thins the dressing and dilutes the flavor. Traditional versions may use 1 cup mayonnaise, while raisins, dried cranberries, chopped nuts, or shredded carrot add sweetness and texture but also increase carbohydrate and WW point values.
