Easy Sweet Italian Sausage Foil Packet Dinner

  • 1 pound Sweet Italian sausage links, preferably uncooked, cut into 1-inch pieces
  • 1 1/2 pounds Baby potatoes, halved or quartered into pieces about 1/2 inch thick
  • 2 bell peppers Bell peppers, sliced
  • 1 medium onion Yellow onion, cut into wedges or thick slices
  • 1 medium zucchini Zucchini, sliced into 1/2-inch rounds
Seasoning
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 1/2 teaspoons Italian seasoning
  • 3/4 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
Optional
  • 1/4 teaspoon Red-pepper flakes
Optional Garnishes
  • As desired Grated Parmesan, chopped parsley, or crusty bread

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C). Tear off four large sheets of heavy-duty aluminum foil and set them on a work surface.
  2. Add the potatoes, bell peppers, onion, and zucchini to a large bowl. Toss with olive oil, garlic, Italian seasoning, kosher salt, black pepper, and red-pepper flakes if using.
  3. Divide the vegetables among the four foil sheets. Arrange the sliced sweet Italian sausage evenly over each portion.
  4. Fold the foil over the filling and crimp the edges tightly to form sealed packets, leaving a little room inside for steam to circulate.
  5. Place the packets on a baking sheet and bake for 30–35 minutes, until the potatoes are tender and the pork sausage reaches at least 160°F (71°C) internally.
  6. Carefully open the packets because the steam is very hot. Finish with Parmesan or parsley, if desired, and serve with crusty bread.

Notes

Cut the potatoes smaller than the other vegetables because they take the longest to cook. For more reliable timing, microwave the cut potatoes for 4–5 minutes before assembling. Do not place packets directly on the oven rack because rendered sausage fat may leak.
