Easy Sugar-Free Gummy Bears Recipe

Bright, chewy, and refreshingly lemony, these homemade sugar-free gummy bears use keto-friendly sweetener and natural flavoring for a fun low-carb snack. The recipe makes approximately 100 to 150 small gummies, depending on the mold size.

Total Time 1 hour 15 minutes
Servings: 4 servings

Ingredients

Gummy Mixture
  • 1/2 cup Cold water
  • 1/4 cup Fresh lemon juice
  • 3 tablespoons Unflavored powdered gelatin
Sweetener and Flavor
  • 2 tablespoons Powdered allulose or another keto-friendly powdered sweetener
  • 1/4–1/2 teaspoon Liquid stevia, optional
  • 1/2–1 teaspoon Natural flavor extract or concentrated water flavoring
  • A few drops Food coloring, optional

Method

Step-by-Step
  1. Lightly grease silicone gummy-bear molds if desired and place them on a baking sheet or tray for stability.
  2. Add the cold water and lemon juice to a small saucepan. Sprinkle the gelatin evenly over the liquid and let it stand for about 5 minutes so it can bloom.
  3. Warm the mixture over low to medium-low heat, whisking until the gelatin has completely dissolved. Do not boil the mixture.
  4. Remove the saucepan from the heat and stir in the powdered sweetener, optional stevia, flavoring, and food coloring. Taste the liquid and adjust the sweetness or flavor before filling the molds.
  5. Transfer the liquid to a squeeze bottle, dropper, or measuring cup with a spout. Carefully fill each gummy-bear cavity.
  6. Refrigerate the filled molds for 30 to 60 minutes, or until the gummies are firm. Remove them from the molds and store them in an airtight container in the refrigerator.

Notes

Blooming the gelatin produces a smoother texture and helps prevent lumps. Keep the mixture below a simmer because boiling can weaken gelatin. For firmer, chewier gummies, use 3 1/2 to 4 tablespoons of gelatin; for softer gummies, use slightly less.
