- Heat the oven to 350°F (175°C). Pour the melted unsalted butter into a 9-by-13-inch baking dish.
- Toss the hulled, halved or thickly sliced strawberries with 1/2 cup of the sugar. Add the optional lemon juice if desired, and let the berries stand for about 10 minutes.
- Whisk the flour, remaining 1/2 cup sugar, baking powder and salt in a bowl. Stir in the whole milk and vanilla just until a smooth batter forms; do not overmix.
- Pour the batter over the melted butter in the baking dish. Do not stir the butter and batter together.
- Spoon the sugared strawberries evenly over the batter without stirring. The batter will rise around the fruit as it bakes.
- Bake for 45–50 minutes, until the top is golden brown and the center is set. A few moist crumbs are fine, but the batter should not look wet.
- Cool the cobbler for 10–15 minutes before serving. Spoon it into bowls and top with vanilla ice cream, whipped cream or powdered sugar.
Notes
Use ripe but firm strawberries for the best texture. If using frozen strawberries, thaw and drain them thoroughly, then add approximately 5–10 extra minutes of baking time if needed. For a smaller batch, use about half the ingredients in a 1-quart baking dish or 8-by-8-inch pan and begin checking after 35 minutes.
