  • 1 4-ounce can Diced green chiles, drained, optional
Wrappers and Cooking
  • 36-48 wrappers Wonton wrappers
  • 1 tablespoon, as needed Cooking spray or vegetable oil
For the Beef
  • about 2/3 cup, or amount specified on seasoning packet Water
Serving Suggestions
  • as desired Salsa
  • as desired Sour cream
  • as desired Ranch dressing or southwest-style dipping sauce

Method

Step-by-Step
  1. Heat the oven to 400°F and line a baking sheet with parchment paper. Lightly coat the parchment with cooking spray.
  2. Brown the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks. Drain any excess fat.
  3. Stir the taco seasoning and the amount of water listed on the packet, usually about 2/3 cup, into the beef. Simmer for 3 to 5 minutes, stirring occasionally, until the mixture thickens.
  4. Combine the seasoned beef with the drained black beans, corn, optional green chiles, and shredded cheese. Let the mixture cool slightly before filling the wrappers.
  5. Place about 1 tablespoon of filling in the center of each wonton wrapper. Moisten the edges with water, fold into a triangle or rectangular packet, press firmly to seal, and gently remove excess air.
  6. Arrange the sealed wontons in a single layer on the prepared baking sheet. Lightly spray or brush the tops with oil.
  7. Bake for 10 to 12 minutes, turning the tray or flipping the wontons once if needed, until the edges are golden and crisp. Serve hot with your favorite dipping sauce.

Notes

Drain the beans, corn, and chiles thoroughly, and cool the filling slightly before assembly so the wrappers seal properly. Keep unused wrappers covered with a damp kitchen towel. For a fried version, deep-fry at about 350°F for approximately 2 to 3 minutes per side, then drain on paper towels.
