Easy Slow Cooker Fresh Vegetable Soup

A colorful Crockpot vegetable soup made with fresh vegetables, diced tomatoes, herbs, and vegetable broth. The slow cooker gently cooks everything into a warm, satisfying soup with very little hands-on work.

Ingredients
  

Fresh Vegetables
  • 1 medium medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 medium medium carrots, sliced
  • 3 stalks celery stalks, sliced
  • 2 medium russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1 medium medium zucchini, sliced or diced
  • 1 cup fresh green beans, trimmed and cut into 1-inch pieces
Canned and Seasoning
  • 1 14 to 15-ounce can diced tomatoes, with juices
  • 6 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 1 leaf bay leaf
  • 1 teaspoon, plus more to taste kosher salt
  • 1/2 teaspoon black pepper

Method
 

Step-by-Step
  1. Wash and prepare all vegetables. Cut the potatoes, carrots, celery, and green beans into similarly sized pieces, keeping the potatoes and root vegetables no larger than about 1 inch so they cook evenly.
  2. Add the onion, garlic, carrots, celery, potatoes, zucchini, green beans, and diced tomatoes with their juices to the slow-cooker insert.
  3. Pour in the vegetable broth, then add the Italian seasoning, bay leaf, kosher salt, and black pepper. Stir briefly to distribute the vegetables and seasonings.
  4. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. The soup is ready when the potatoes and carrots are fork-tender.
  5. Remove the bay leaf before serving. Taste the soup and adjust the salt and pepper as needed, then ladle it into bowls while hot.

Notes

For firmer zucchini, add it during the last 30 to 60 minutes of cooking. Fresh parsley, basil, or a little lemon juice stirred in at the end brightens the flavor. Refrigerate leftovers promptly and reheat gently on the stovetop or in the microwave.
