Easy Pancake Mini Muffins

Tender, bite-sized pancake muffins made from scratch in a mini-muffin pan. They are delicious plain, filled with fruit or mini chocolate chips, and served warm with maple syrup.

  • 1 cup (125 g) All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1 Large egg
  • 3/4 cup (180 ml) Buttermilk
  • 2 tablespoons (28 g) Unsalted butter, melted and slightly cooled
  • 1 teaspoon, optional Vanilla extract
For the Pan and Serving
  • As needed Cooking spray or butter
Optional Additions
  • 1/2 cup Blueberries, mini chocolate chips, or finely chopped strawberries
  • As desired Maple syrup or powdered sugar

Method
 

Step-by-Step
  1. Heat the oven to 400°F (200°C) and grease a 24-cup mini-muffin pan with cooking spray or butter.
  2. Whisk the flour, sugar, baking powder, baking soda, and salt together in a medium bowl.
  3. In a separate bowl, whisk the egg, buttermilk, melted butter, and optional vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. A few small lumps are fine, so do not continue mixing once the flour disappears.
  5. Divide the batter among the prepared mini-muffin cups, filling each about two-thirds full. Add blueberries, mini chocolate chips, or finely chopped strawberries if desired.
  6. Bake for 10–12 minutes, until the tops are lightly golden and a toothpick inserted in the center comes out clean.
  7. Let the mini muffins cool in the pan for about 5 minutes, then transfer them to a wire rack. Serve warm with maple syrup for dipping or a light dusting of powdered sugar.

Notes

Avoid overmixing because excessive stirring can make the mini muffins dense. Use a small cookie scoop for evenly sized portions. Store cooled muffins in an airtight container and warm gently before serving.
