- Heat the oven to 400°F (200°C) and grease a 24-cup mini-muffin pan with cooking spray or butter.
- Whisk the flour, sugar, baking powder, baking soda, and salt together in a medium bowl.
- In a separate bowl, whisk the egg, buttermilk, melted butter, and optional vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and stir just until combined. A few small lumps are fine, so do not continue mixing once the flour disappears.
- Divide the batter among the prepared mini-muffin cups, filling each about two-thirds full. Add blueberries, mini chocolate chips, or finely chopped strawberries if desired.
- Bake for 10–12 minutes, until the tops are lightly golden and a toothpick inserted in the center comes out clean.
- Let the mini muffins cool in the pan for about 5 minutes, then transfer them to a wire rack. Serve warm with maple syrup for dipping or a light dusting of powdered sugar.
Notes
Avoid overmixing because excessive stirring can make the mini muffins dense. Use a small cookie scoop for evenly sized portions. Store cooled muffins in an airtight container and warm gently before serving.
