Easy One-Pot Ground Beef Stroganoff

A creamy, savory ground beef stroganoff with mushrooms and egg noodles, all cooked in one pan. This comforting dinner is ready in about 35 minutes and serves 4–6 people.

  • 1 tablespoon Olive oil or butter, only if needed
  • 1 pound (450 g) Lean ground beef
  • 1 small Small yellow onion, finely diced
  • 8 ounces (225 g) Cremini or white mushrooms, sliced
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons All-purpose flour
  • 3 cups (720 ml) Low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 8 ounces (225 g) Uncooked wide egg noodles
Seasonings
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon, plus more to taste Black pepper
Finishing Ingredients
  • 1/2 to 3/4 cup Sour cream
  • 2 tablespoons, optional Fresh parsley, chopped

Method
 

Step-by-Step
  1. Heat a large deep skillet or Dutch oven over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it up as it browns; drain excess fat if necessary.
  2. Add the diced onion and sliced mushrooms. Cook for 4–5 minutes, stirring occasionally, until the onion softens and the mushrooms release most of their moisture.
  3. Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  4. Sprinkle the flour over the beef and vegetables. Stir for 1 minute so the flour coats everything evenly.
  5. Gradually pour in the beef broth while stirring to prevent lumps. Add the Worcestershire sauce, Dijon mustard, kosher salt, and black pepper.
  6. Stir in the uncooked wide egg noodles. Bring the mixture to a gentle boil, then reduce the heat, cover, and simmer for 8–10 minutes, stirring once or twice so the noodles do not stick.
  7. Remove the pan from the heat and let it stand for 1–2 minutes. Stir in the sour cream, taste, and adjust the seasoning.
  8. Garnish with chopped fresh parsley, if using, and serve immediately.

Notes

Add sour cream off the heat so the sauce stays smooth. Use low-sodium broth and season at the end because beef broth and Worcestershire sauce can already be salty. If the pan becomes dry before the noodles are tender, stir in a small splash of broth.
