A no-bake lemon mousse cake with a buttery cookie crust, silky cream cheese mousse, and fresh lemon flavor. Chill it until firm, then finish with lemon zest, whipped cream, or thin lemon slices.

Ingredients
  

Crust
  • 1 1/2 cups (150 g) Finely crushed digestive biscuits or graham crackers
  • 6 tablespoons (85 g) Unsalted butter, melted
  • 1 tablespoon Granulated sugar, optional
  • 1 pinch Salt
Lemon Mousse
  • 2 teaspoons (about 6-7 g) Unflavored powdered gelatin
  • 3 tablespoons Cold water
  • 8 ounces (225 g) Full-fat cream cheese, softened
  • 3/4 cup (90 g) Confectioners' sugar
  • 2 lemons Finely grated lemon zest
  • 1/2 cup (120 ml) Freshly squeezed lemon juice
  • 1 1/2 cups (360 ml) Cold heavy whipping cream
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
Optional Topping
  • As needed Thin lemon slices or strips of lemon zest
  • As needed Whipped cream
  • As needed Confectioners' sugar

Method
 

Step-by-Step
  1. Line the base of an 8-inch springform pan with parchment paper. Combine the cookie crumbs, melted butter, optional sugar, and salt, then press the mixture firmly into the pan and refrigerate it while preparing the mousse.
  2. Sprinkle the gelatin over the cold water in a small bowl and let it stand for 5 minutes. Melt it gently in short microwave intervals or over hot water, taking care not to boil it.
  3. Beat the softened cream cheese, confectioners' sugar, lemon zest, lemon juice, vanilla, and salt until completely smooth. Stir a small amount of this mixture into the melted gelatin, then quickly blend that mixture back into the remaining lemon mixture.
  4. Whip the cold heavy cream to medium-stiff peaks, stopping before it becomes grainy or buttery. Fold the whipped cream into the lemon mixture in two or three additions to keep the mousse airy.
  5. Spoon the mousse over the chilled crust and smooth the surface. Refrigerate the cake for at least 4 hours, or overnight when possible, until firm.
  6. Run a warm, thin knife around the edge before releasing the springform ring. Garnish just before serving with lemon slices, lemon zest, whipped cream, or a dusting of confectioners' sugar.

Notes

Use fresh lemon juice and finely grated zest for the brightest flavor. Gelatin should be fully dissolved and cool rather than hot before it is combined with the dairy mixture. Store the covered cake in the refrigerator and chill overnight for the neatest slices.
