Ingredients

Main Ingredients
  • 2 21-ounce cans Lemon pie filling
  • 1 box, approximately 15.25 ounces Lemon cake mix
  • 1 cup Unsalted or salted butter, very cold and thinly sliced
Optional Ingredients
  • 1 teaspoon Finely grated lemon zest
Optional Serving Suggestions
  • As desired Powdered sugar or vanilla ice cream

Method

Step-by-Step
  1. Heat the oven to 350°F (175°C) and lightly grease a 9 x 13-inch baking dish.
  2. Spread both cans of lemon pie filling evenly across the bottom of the prepared dish. Sprinkle the optional lemon zest over the filling.
  3. Sprinkle the dry lemon cake mix evenly over the pie filling. Do not stir or combine the layers.
  4. Arrange the thin slices of very cold butter over the entire surface, covering as much of the dry cake mix as possible.
  5. Bake for 45–50 minutes, beginning to check at 45 minutes, until the top is golden brown and the lemon filling bubbles around the edges.
  6. Let the cake rest for 10–15 minutes before serving. Serve warm with powdered sugar or vanilla ice cream, if desired.

Notes

Slice the cold butter very thinly or grate it over the cake mix for better coverage. Do not stir the layers. Store covered in the refrigerator and reheat individual portions gently before serving.
