- Heat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the softened butter and granulated sugar until smooth. Beat in the egg, fresh lemon juice, and finely grated lemon zest.
- Stir in the Original Bisquick baking mix just until a soft dough forms. Do not overmix; if desired, chill the dough for 15 to 20 minutes to make it easier to handle.
- Drop rounded tablespoonfuls of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
- Bake for 8 to 10 minutes, until the edges are set and just lightly golden while the centers still look slightly soft.
- Cool the cookies on the baking sheet for about 5 minutes, then transfer them to a rack. Dust with powdered sugar, or finish with a simple lemon glaze if desired.
Notes
Use fresh lemon zest as well as juice because the zest provides concentrated lemon aroma. Avoid overbaking, since Bisquick-based cookies firm as they cool. For a glaze, combine powdered sugar with a small amount of lemon juice until smooth and drizzle over cooled cookies.
