- Pat the shrimp dry with paper towels, then season them with the kosher salt and freshly ground black pepper.
- Finely grate about 1 teaspoon of lemon zest and squeeze 2 tablespoons of lemon juice. Keep the zest and juice in separate small bowls until the shrimp are cooked.
- Heat the olive oil and unsalted butter in a large skillet over medium-high heat.
- Add the minced garlic and cook for about 30 seconds, stirring often, until fragrant but not browned.
