Easy Korean Rice Bowls Recipe

A fast Korean-inspired dinner featuring sweet-savory ground beef, steamed rice, fresh vegetables, spinach, sesame, and gochujang. It is ready in about 35 minutes and serves four.

Ingredients
  

Rice
  • 1 cup uncooked Short- or medium-grain white rice
  • 1 1/2 cups Water
Korean-Style Beef
  • 1 pound Lean ground beef
  • 3 cloves Garlic, minced
  • 1 tablespoon Freshly grated ginger
  • 1/4 cup Low-sodium soy sauce
  • 2 tablespoons Packed brown sugar
  • 1 tablespoon Toasted sesame oil
  • 1–2 teaspoons Gochujang
  • 1/4 teaspoon Crushed red-pepper flakes, optional
  • 2 green onions Green onions, thinly sliced
  • 1 teaspoon Toasted sesame seeds
Vegetables and Toppings
  • 1 carrot Medium carrot, julienned or grated
  • 1 cucumber Small cucumber, thinly sliced
  • 2 cups Baby spinach
  • 4 eggs Eggs, optional
  • As needed for serving Additional sliced green onion, sesame seeds, and gochujang

Method
 

Step-by-Step
  1. Rinse the rice until the water is mostly clear. Cook it with 1 1/2 cups water, or according to the rice package directions, then keep it covered and warm.
  2. In a small bowl, stir together the soy sauce, brown sugar, toasted sesame oil, gochujang, garlic, ginger, and optional red-pepper flakes.
  3. Heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart, until browned and no longer pink; drain excess fat if needed.
  4. Pour the sauce into the skillet and simmer for 2–3 minutes, stirring often, until the beef is glossy and the sauce has slightly thickened.
  5. Quickly sauté the spinach in the same or a separate pan for 1–2 minutes. Leave the carrot and cucumber raw, or sauté them separately for 2–3 minutes if preferred.
  6. Divide the warm rice among four bowls. Add the beef, spinach, carrot, and cucumber, then top with a fried egg if using.
  7. Finish with sliced green onion and toasted sesame seeds. Serve with extra gochujang so everyone can adjust the heat.

Notes

Use lean ground beef and medium-high heat for better browning. Add gochujang gradually because brands vary in heat and salt. Keep cucumber raw for a crisp contrast, and store leftover beef and rice separately in the refrigerator for up to 3 days.
