- Heat the oven to 425°F and line a baking sheet with parchment paper.
- Slice the zucchini into rounds approximately 1/4 inch thick, then pat both sides dry with paper towels.
- Arrange the slices in a single layer on the prepared baking sheet. Brush or lightly toss them with olive oil, then season with Italian seasoning, garlic powder, and fine salt.
- Roast the zucchini for 5–7 minutes, until it begins to soften but still holds its shape.
- Remove the baking sheet from the oven. Add a small amount of low-sugar marinara or pizza sauce to each round, followed by mozzarella, Parmesan, and one small pepperoni slice.
- Return the tray to the oven and bake for 5–8 minutes, until the cheese is melted and bubbling. For browned cheese, broil for 1–2 minutes at the end while watching carefully.
- Let the zucchini pizza bites cool for several minutes before serving. Finish with basil, red-pepper flakes, or black pepper if desired.
Notes
Keep zucchini slices close to 1/4 inch thick for the best texture. Use only a small amount of sauce because zucchini releases moisture as it cooks. Store leftovers in the refrigerator and reheat in the oven or air fryer for the best texture.
