- Heat the oven to 400°F (205°C). Lightly grease a baking dish or line a sheet pan with parchment paper.
- Pat the pork chops completely dry with paper towels, then brush both sides with the olive oil.
- Combine the paprika, garlic powder, Italian seasoning or dried thyme, onion powder, kosher salt, black pepper, and optional brown sugar in a small bowl.
- Rub the seasoning mixture evenly over both sides of each pork chop. Arrange the chops in a single layer without overlapping.
- Bake for about 18–25 minutes for one-inch chops, checking the thickest part with an instant-read thermometer. Remove the pork when it reaches 145°F (63°C).
- Rest the baked pork chops for 3–5 minutes before serving so the juices can settle.
Notes
A 20–30 minute rest after seasoning or light salting can improve moisture and flavor, but it is optional. Do not rely on color or the clock alone; thickness, bone-in versus boneless meat, and oven differences affect cooking time. Pork may retain a faint pink center at the safe temperature of 145°F (63°C).
