  • 1/2 teaspoon Onion powder
  • 1 teaspoon Kosher salt, or to taste
  • 1/2 teaspoon Black pepper

Step-by-Step
  1. Heat the oven to 400°F (205°C). Lightly grease a baking dish or line a sheet pan with parchment paper.
  2. Pat the pork chops completely dry with paper towels, then brush both sides with the olive oil.
  3. Combine the paprika, garlic powder, Italian seasoning or dried thyme, onion powder, kosher salt, black pepper, and optional brown sugar in a small bowl.
  4. Rub the seasoning mixture evenly over both sides of each pork chop. Arrange the chops in a single layer without overlapping.
  5. Bake for about 18–25 minutes for one-inch chops, checking the thickest part with an instant-read thermometer. Remove the pork when it reaches 145°F (63°C).
  6. Rest the baked pork chops for 3–5 minutes before serving so the juices can settle.

Notes

A 20–30 minute rest after seasoning or light salting can improve moisture and flavor, but it is optional. Do not rely on color or the clock alone; thickness, bone-in versus boneless meat, and oven differences affect cooking time. Pork may retain a faint pink center at the safe temperature of 145°F (63°C).
