  • 1 15-ounce can Mandarin oranges, well drained
  • 2 cups Miniature marshmallows

  1. Add the orange gelatin to a large mixing bowl. Pour in the boiling water and whisk until every gelatin crystal has completely dissolved.
  2. Stir in the cold water until the mixture is evenly blended. Refrigerate it for about 20 to 30 minutes, until it cools and begins to thicken but is not fully set.
  3. Fold in the cottage cheese and thawed whipped topping until mostly combined. Use a gentle folding motion so the mixture stays light and airy.
  4. Gently fold in the very well-drained mandarin oranges and miniature marshmallows. Avoid vigorous stirring, which can break the orange segments and deflate the whipped topping.
  5. Cover the bowl and refrigerate the dessert for at least 2 hours. For the best texture, chill it for 3 to 4 hours or overnight before serving.

Notes

Drain the mandarin oranges very thoroughly because excess syrup or water can make the fluff loose. For a smoother, more mousse-like result, use 12 ounces of whipped topping; use the standard 8 ounces for a firmer, traditional fluff salad texture.
