Step-by-Step
- Line an 8-inch square baking pan with parchment paper or foil, leaving an overhang on two sides for lifting. Lightly grease the lining if desired.
- Place the semisweet chocolate chips, sweetened condensed milk, and butter in a saucepan over low heat. Stir constantly until the chocolate and butter are completely melted and the mixture is smooth, taking care not to let it boil.
- Remove the saucepan from the heat and stir in the Irish cream liqueur until evenly blended. Fold in the chopped walnuts or pecans if using.
- Spread the warm fudge mixture evenly into the prepared pan. Smooth the top with a spatula, then refrigerate for approximately 2 hours, or until firm.
- Lift the chilled fudge from the pan using the parchment or foil overhang. Cut it into approximately 36 small squares with a large sharp knife.
Notes
Keep the heat low and stir continuously to prevent scorching, seizing, or an oily texture. For clean cuts, chill the fudge thoroughly and warm and wipe the knife dry between slices. Store the covered fudge in the refrigerator.
