- Heat the oven to 400°F (200°C). Place a large sheet of heavy-duty foil on a baking sheet, using a second sheet if needed to prevent leaks.
- Pat the salmon dry and place it skin-side down in the center of the foil.
- Whisk together the honey, melted unsalted butter or olive oil, minced garlic, lemon juice, optional soy sauce, kosher salt, and black pepper.
- Pour the honey-garlic mixture over the salmon and arrange lemon slices on top if desired.
- Fold the foil over the fish and crimp the edges into a sealed packet. Leave a little room above the salmon so steam can circulate.
- Bake for 15 to 20 minutes, depending on the thickness of the fillet. Individual portions may cook in 12 to 15 minutes, while a thick fillet may need closer to 20 minutes.
- Carefully open the packet, checking for hot steam. For a more caramelized surface, broil the salmon for 1 to 3 minutes while watching it closely.
- Check that the thickest part reaches 145°F (63°C) and flakes easily. Garnish with parsley or green onion and serve with the pan juices.
Notes
Use a salmon fillet with an even thickness for more consistent cooking. Open the foil carefully because the packet releases very hot steam. If broiling, stay nearby because the honey-butter glaze can burn quickly.
