- Add the honey and crushed red-pepper flakes to a small saucepan. Warm over low heat for 2–3 minutes, stirring occasionally, until the honey is hot and fluid but never boiling.
- Remove the saucepan from the heat and stir in the apple-cider vinegar. Add the optional cayenne pepper now if you want a sharper, hotter finish.
- Let the mixture steep for 5–10 minutes so the pepper flavor can infuse into the honey. Taste carefully and add more pepper flakes or cayenne if desired.
- Use the hot honey immediately, or strain out the pepper flakes through a fine-mesh strainer for a smoother sauce. Transfer to a clean jar and cool before sealing.
Notes
Keep the honey over low heat and do not let it boil. Store in a clean sealed jar at room temperature for short-term use or refrigerate for longer storage; gently warm a refrigerated jar before serving.
