- Add the granulated sugar and the appropriate amount of unsulphured molasses to a mixing bowl, food processor, or stand mixer.
- Mix until the molasses is evenly distributed and the sugar is uniformly brown. This usually takes 1 to 2 minutes in a food processor or stand mixer, while hand mixing with a fork takes several minutes.
- Break up any remaining clumps, then use the brown sugar immediately or transfer it to an airtight container for room-temperature storage.
- When a baking recipe calls for packed brown sugar, firmly press the homemade sugar into the measuring cup before adding it to the recipe.
Notes
Use regular unsulphured molasses, not blackstrap molasses, because blackstrap is much more bitter and can overpower baked goods. Keep the finished brown sugar in an airtight container so it does not dry out or harden.
