Easy Healthy Banana Pudding Everyone Will Love

A no-cook banana pudding made with Greek yogurt, ripe bananas, vanilla, and a small amount of maple syrup or honey. Layer it with vanilla wafers and banana slices for a lighter dessert with classic comfort-food appeal.

Banana Pudding
  • 2 large Very ripe bananas, divided
  • 1 1/2 cups Plain Greek yogurt, preferably low-fat or nonfat
  • 1/2 cup Unsweetened milk or unsweetened almond milk
  • 2 tablespoons Pure maple syrup or honey
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Ground cinnamon, optional
Layers
  • 24 wafers Vanilla wafers
  • 1 banana Additional banana, sliced
Optional Topping
  • 1 cup Light whipped topping or whipped cream

Method
 

Step-by-Step
  1. Mash two very ripe bananas in a medium bowl until mostly smooth. A few tiny soft pieces are welcome, but continue mashing if you prefer a completely even pudding.
  2. Whisk the mashed bananas with Greek yogurt, unsweetened milk, maple syrup or honey, vanilla extract, and optional cinnamon until creamy. For an especially smooth pudding, blend the mixture instead of whisking.
  3. Let the banana mixture stand for 5-10 minutes so it can thicken slightly. While it rests, break the vanilla wafers into pieces and slice the additional banana.
  4. In a serving bowl or individual glasses, arrange a layer of vanilla wafer pieces, followed by banana pudding and sliced banana. Repeat the layers until the ingredients are used, finishing with pudding or banana slices.
  5. Add light whipped topping or whipped cream if desired. Cover the dish and refrigerate for at least 1 hour before serving.
  6. Add a few fresh banana slices immediately before serving for the brightest color and freshest flavor. Serve cold with extra wafer crumbs if desired.

Notes

Use heavily speckled bananas for the sweetest, smoothest pudding. For a thicker texture, use full-fat Greek yogurt or reduce the milk to 1/4 cup. Assemble close to serving time, or lightly toss banana slices with lemon juice to help prevent browning and keep the wafers from becoming excessively soggy.
