  1. Combine the Guinness, brown sugar, ketchup, Dijon mustard, Worcestershire sauce, soy sauce, garlic, vinegar, black pepper, and optional cayenne in a small saucepan.
  2. Bring the mixture to a gentle boil over medium heat, stirring until the brown sugar dissolves.
  3. Reduce the heat to medium-low and simmer uncovered for 20 to 30 minutes, stirring occasionally.
  4. Cook until the sauce is glossy and reduced by roughly one-half, with enough body to coat the back of a spoon.
  5. Strain the sauce for a smoother dip if desired, then cool it for several minutes before serving. Remember that it thickens further as it cools.

Notes

Keep the sauce at a gentle simmer rather than an aggressive boil, especially after adding the sugar. Stir more frequently near the end to prevent scorching. If the stout tastes overly bitter, balance the sauce with a little extra brown sugar or honey.
